I received a tea recipe booklet from Sugimoto Tea.
This seasoning recipe has three Japanese green teas in it: houjicha, sencha and genmaicha. That’s why I had to try it.
It’s meant to be used in savory dishes.
Here’s the recipe:
- 1 tbsp loose leaf houjicha
- 1 tbsp loose leaf sencha
- 2.5 tbsp loose leaf genmaicha
- 1 tsp sea salt
- 1 tsp black pepper
- 1 tsp dried dill
- 1.5 tsp garlic powder
All you have to do is to mix the ingredients and then grind them into a powder with a spice grinder or a mortar and pestle.
I have a wooden mortar and pestle which I always use when grinding spices.
It only take some effort to obtain a fine powder this way.
The seasoning has a pleasant aroma. It made me feel hungry.
I also liked its color.
It has just the right amount of salt and spicy flavor.
So far I have tried it on rice, pasta and chicken.
I’ve enjoyed it a lot.
